Vegan Lemon Cookie Smoothie

This is by far my favorite smoothie and believe it or not, I actually blended this lemony delight by mistake. My secret weapon? Not a lemon. So if you're interested in skipping the puckered, sour face and finding out what makes this cup of sunshine so delish, keep reading! 

Because I'm a plant-based athlete, making sure I'm getting enough protein on a daily basis often requires some creativity. This is where the smoothie comes in to play. For lunch, I substitute a soup and sandwhich for a protein-packed frozen treat. I've never really been a fan of eating a big lunch anyway and if you make your smoothie just right, it's more like skipping lunch for a healthy milkshake. To all of my dessert fans, you'll have to trust me on this one. So here's what makes the Lemon Cookie Smoothie so damn good: 

What you will need: 

1 Large Frozen Banana
2 Pitted Dates
2 Large Ice Cubes
1/4 Cup of Raw Almond Butter (I use Trader Joe's because it doesn't contain salt)
1/2 Scoop of Vanilla Protein Powder (My favorite is Sunwarrior but you can use any plant based protein powder of choice)
1 Tsp Lemon Flavor by Frontier Co-Op

Let's talk about the Lemon Flavor by Frontier Co-Op for just a sec. This little bottle of magic changed my smoothie game drastically. Unlike most Lemon flavors or extracts, Frontier Co-Op Lemon Flavor has zero chemical taste. What I mean is, it doesn't taste artificial or anything remotely similar to cleaning products. I also love it because, what mess? If I can skip cutting a lemon, I'm definitely going to.

Warning: to all you lemon lickers out there (you know who you are...) this lemon flavor does not taste sour! You have been warned.
