Vegan Chocolate Covered Strawberry Smoothie
With Valentine's Day right around the corner, I couldn't help but come up with something rich and decadent that still favored my healthy eating habits. Next thing you know, I'm whipping up homemade, vegan dark chocolate to create this antioxidant rich smoothie. It doesn't matter how you plan to spend V-day: a romantic evening out, at home with your lover or completely alone, this smoothie will leave you as satisfied as the hot sex you have planned. Now you may be wondering, "What's the sexy secret?" and the answer is simple! One nostalgic scoop of Oatly old-fashioned, Strawberry icecream and I must say... despite their claim, this frozen treat is far more than pretty average. So if you're looking to score a few aphrodesiacs, this smoothie might just be your chocolatey solution. But beware, if you're not in love with the coco-nut, you might just have to sit this one out. Still reading? Excellent! Go grab your blender, fresh strawberries, a pint of ice cream and some cocoa powder. It's time to get sexy.
Chocolate Covered Strawberries
First we need to make the homemade chocolate for the strawberries. This concoction is also used in the smoothie itself, giving it that rich, dark chocolate and coconutty flavor.
Heat a cup or two of water in a small pot. Then place a small heat-conducting bowl on top (we've just created a double boiler) Fancy right?! Keep in mind this bowl will be hot so make sure to cover your hands with either oven mits or a dry dish towel. Next place in the bowl:
1/4 cup of coconut oil
1 tbs cocoa powder
1/4 tsp of vanilla extract or flavoring
1 tbs pure maple syrup
Coconut oil melts fairly quickly so this part of the process does not take long at all. Continue to stir to ensure all of the ingredients have melded together. Once you have your chocolate mixture, place in fridge to allow for it to thicken (about five minutes). You still want the mixture to be somewhat thin so that you can coat the strawberries in it. Next, cover your strawberries and place on a pan (I only coated four strawberries) Now place them in the freezer for chocolate to harden (not even five minutes). Oh and try not to argue over who gets to lick the spoon. It's that good!
Time to Make the Smoothie:
1 Frozen Banana
6 Fresh Strawberries
1/2 cup of Oatly Strawberry Ice Cream
1 Tbs Chocolate Mixture
1 Tbs Cocoa Powder
1/2 cup Unsweetened Almond Milk
2 Large Ice Cubes
Cacao Nibs for Garnish (optional)
